Green Beans with Caramelized Onion and Chestnuts

Green beans, onions and chestnuts is a yummy and healthy combo. I have tried green beans with sesame seeds and almonds. Tender crisp beans go well with crunchy nuts. Caramelized onions and chestnuts has a natural sweetness which adds a nice touch to this dish. You can roast the chestnuts or boil them.This can be served as a side dish.

Ingredients
Green beans chopped- 12 oz.
Onion - 2 large
Garlic - 2 cloves
Chopped chestnuts-8 oz.
Paprika or smoked paprika- 1 tsp
salt and pepper to taste
Lemon juice- 1/2 lemon
Olive oil- 3 tsp (or butter)




To roast the  chestnuts wash and then dry them with a towel. Place on a cutting board. Using a sharp knife make a "X" on the chestnut skin. This allows the steam to escape and easy to peel later. Bake for 25 minutes in 350 degree oven. You can also boil the chestnuts like potatoes. Make the "X" mark and boil for 10-12 minutes and drain them. When cool enough to handle peel off the skin and cut into small pieces.

Chop beans, add a pinch of salt and mix and them steam them for 3-4 minutes. Set this aside.
Heat olive oil or butter in a pan and add thinly sliced onions and chopped garlic. Add salt and pepper to taste and saute in medium flame for 4-5 minutes. Reduce the heat and continue cooking for another  5-6 minutes till the onion is caramelized. Add smoked paprika and saute for another minute.Add green beans and chopped chestnuts and mix well. Drizzle lemon juice and serve.

Spicy Fish fry

This is a spicy fish fry which my family enjoys every time it is made at home. It goes well with rice and  fish curry. There is no doubt that these trio complement each other so well and is indispensable part of the lunch menu back home in Kerala.The marinade I have used has a unique south Indian blend of spices and you can increase or decrease the amount of spices to suit your taste. What I love in this fish fry is the blend of flavors of coconut oil,curry leaves and shallots. Ingredients Fish- 4-5 medium sized pieces Shallots 2-3 small Ginger- 1 inch thick Garlic- 2 pods Green chilly- 2 Dry Red Chilly-3 Pepper whole- 3/4 tsp Turmeric powder- 1/3 tsp Lemon juice- 1/2 tsp Mint leaves- 5-6 Curry leaves 4-5 Salt to taste- Coconut Oil for frying Place all ingredients except fish and oil into a mixer and blend into a smooth fine paste. Cut and clean fish and marinate with this paste and keep aside for fifteen minutes. Shallow fry in coconut oil. Flip over th
